In order for the dough to rise well in the oven, kefir should be at room temperature when kneading.

Kefir dough for pies in the oven

Break an egg into a deep bowl, add salt and sugar.

Whisk the mixture until bubbles appear and add sour cream.

Stir. Pour in the kefir and whisk again.

Add vegetable oil and stir.

Pour in flour citric acid, soda.

The amount of flour depends on the thickness of sour cream and kefir, so add flour in parts, while kneading the dough until it resembles yeast in consistency. When the dough stops sticking too much to your hands, place it on a table sprinkled with flour and knead.

Let it sit for half an hour under a bowl. During this time it will become soft and pliable.

Egg and onion filling for pies

Boil the eggs for 10 minutes. Refrigerate. Peel off the shell. Chop them with a fork.

Add chopped green onions to them.

Add salt to the filling, mix and rub a little so that it does not crumble too much.

How to cook kefir pies in the oven

Divide the rested dough into pieces the size of egg. Roll them into balls. Cover with a towel to prevent them from crusting and start forming the pies.

Knead the bun with your hands, giving it the shape of a thick flat cake. Place the egg filling in the middle.

Pinch the edges well. You will get these pies.

Place them seam side down on an oiled baking sheet and brush with egg.

Place the kefir pies in the oven preheated to 200° and bake for about 30 minutes. As soon as the pies are browned, they can be removed from the oven.

Beat kefir with salt, sugar and butter. Gradually add flour, stirring until smooth. Then knead the dough with your hands, sprinkling with flour.

Roll it out into a not too thin layer. Sprinkle ⅓ baking soda and rub with your hands to distribute evenly.

Fold the dough into an envelope, roll it out and rub it again with baking soda. Repeat the same thing again. Finally, form the dough into a ball and leave for 20 minutes.

  • 100 ml kefir;

Dissolve yeast, sugar and 2 tablespoons of flour in warm milk. Leave in a warm place for 15 minutes. Add kefir at room temperature, melted cooled butter, salt, egg and mix thoroughly.

Add the remaining flour and knead the dough thoroughly. Form it into a ball and place it in a bowl. Cover with a towel and leave in a warm place for 40–50 minutes. The dough should increase in volume by about 2 times.

Knead the dough with your hands for 10-15 minutes until it becomes smooth. Form it into a ball and place it in a greased bowl.

Cover the bowl with a towel and leave for 1 hour in a warm place. The dough should increase in volume by about 2 times. Gently knead it with your hands and leave it warm for another 40–50 minutes. The dough will rise even more and become softer.

  • Leave under a towel to rise for 1.5-2 hours (but this type of dough increases little in volume during proofing, showing its maximum effect during baking)
  • We form balls from the mass, stretch with a flat cake, lay out the filling, pinch the edges
  • Place evenly on a baking sheet lined with parchment (do not grease it with anything), cover with a towel, let rise for 15-20 minutes

  • Bake at 180 degrees for half an hour, 10 minutes before the end of the cooking process, brush with beaten egg.

In order for the baked goods to remain fresh and soft for a long time, after they are ready, they must be transferred while still hot into a container, covering everything with a clean bag. Thanks to this, the pies become soft and tender.

Kefir dough without yeast and eggs for fried pies

Lean, light pies without eggs and yeast are also incredibly tasty, finger-licking!

The frying option will appeal to connoisseurs of hearty food or housewives who do not have a decent oven. A frying pan is always at hand!

Ingredients:

  • Kefir – 1 tbsp.
  • Flour – 2 tbsp.
  • Salt – 0.5 tsp.
  • Soda – 0.5 tsp.
  • Sugar – 1 tbsp. with a slide
  • Vanillin – 1.5 g (for sweet filling)
  • Vegetable oil
  • Filling: apples, raisins, cinnamon and sugar

  • Pour kefir into a large container, add soda, leave for 5-7 minutes for the chemical reaction to begin.

Products:

  • Flour – 3.5 tbsp.
  • Kefir – 1 tbsp.
  • Oil – 80 g
  • Sugar – 1 tsp.
  • Salt – 1 tsp. no slide
  • Soda – 0.5 tsp.
  • The filling can be anything

  • Mix flour with sugar, salt, soda

  • Whisk butter, previously melted at room temperature (if you are too lazy to melt it, the dough will not be elastic and will begin to tear)

  • Mix everything first with a spoon, then with your hands.
  • Roll out the mass to a thickness of 3-5 mm, cut out circles with a glass, make pies from them with the chosen filling, so we get pies of the same size and ideal shape
  • Place them on parchment, brush with egg or sugared water, bake for about 15 minutes at 180-200 degrees (if the size is small, 10 minutes may be enough).

  • Mix everything, add sunflower oil, part of the flour, soda (used instead of yeast, but the main thing is to use powder good quality, not old, it is recommended to change it every 5-6 months)

  • Add flour, sprinkle the table with it, knead the dough with your hands

  • Lubricate the table vegetable fat, knead the mass on it so as not to clog it with excess flour, stir until smooth
  • If, even when kneading, the dough sticks to greased hands, it means there is not enough flour; you should add it a teaspoon at a time until the desired consistency (this happens due to the different thickness of kefir)

  • Lubricate the container with oil, lay out the mass, tighten cling film, leave to “rest” for 15-20 minutes

  • We pour a little on the table sunflower oil, divide the dough into small balls (volume about a tablespoon), stretch with your fingers, making the edges thinner, the middle denser
  • Place the filling in the center, pull out the edges, seal with dumplings, thus making all the pies
