Chebureks from zucchini with minced meat

Ingredients:

  • zucchini – 2 pcs.;
  • egg – 2 pcs.;
  • onion – 2 pcs.;
  • flour – 100 g;
  • cheese – 100 g;
  • milk – 100 ml;
  • minced meat – 150 g;
  • vegetable oil – 100 ml;
  • greens - to taste;
  • spices.

Preparation

We wash the zucchini and onions, process and grate them. Then add eggs, pour in milk, throw in grated cheese, season with spices and add chopped fresh herbs. Everything's good mix, add flour, pour in a little sunflower oil and knead into a homogeneous dough, a little thicker than for pancakes. For the filling, fry the minced meat in vegetable oil along with diced onion. Season with salt and pepper to taste and add finely chopped herbs. Heat the frying pan, coat it with oil, pour in a little vegetable batter so that you get a thin pancake. Immediately, before it sets, put some minced meat on one side, leaving the edges free. After this, cover the filling with the free side of the pancake, lightly press the edges with a spatula so that they stick together well. Fry the cheburek over low heat on both sides under the lid until golden brown. Place the finished delicacy on a plate and serve with

I'll tell you everything along the way. First, I ground 150 g of chicken fillet in a food processor. Then I chop 1 onion and fry it in a frying pan until golden brown.

And once the onions are fried, I put the ground fillet on top in a frying pan and fry everything until done.

During the cooking process, add some salt and ground pepper. The fillet is ready; this will be the filling for the pasties.

Now I'm working on zucchini. I grate 350 g of zucchini into another container on a fine grater, and then squeeze them out of the juice so that the dough is not very liquid. I grate the zucchini not peeled, they are very young and their skin is thin.

I also chop 1 onion on a fine grater and put it in the minced squash. Next, add 50 ml of milk to the mixture and beat in 2 eggs.

Next I pour in 150 g of oatmeal, half a teaspoon of salt and ground pepper.

I also add chopped parsley and dill to the dough. My dill is frozen. And add 1 tablespoon of starch.

Now mix everything with a spoon until smooth.

And already, based on my own experience, I understand that such dough will not be baked in my frying pan and will not hold the shape of the cheburek. It turned out to be liquid. And I had to add 3 tablespoons of flour. And then everything worked out for me. And if you cook according to this recipe, you may need to add less or more flour. See for yourself, friends. And you need to give the finished dough some time to stand so that the flakes can form a frame. Then the dough becomes more elastic. I pour the dough into a heated frying pan with a small amount of vegetable oil to make a pancake.

I spread the dough a little over the pan with a spoon and immediately put the filling in the middle of the pancake. And I cover the filling with one side of the pancake and press the edges with a spatula so that the filling does not fall out.

Immediately cover the pan with a lid and bake the cheburek until done, about 2 minutes.

I put the finished pasties on a dish and serve them to the table. They turned out tender, soft and tasty. Especially with sour cream and sliced vegetables

I wish you, friends, to prepare such a dietary dish and please your loved ones. Good luck to all!

See you again!

Required Products:

- 350 grams of zucchini,
- 200 grams of flour,
- 180 grams of milk,
- 2 pieces of chicken eggs,
- 300-350 grams of minced meat,
- a little dill,
- 1 head of onion,
- salt to taste,
- pepper to taste,
- vegetable oil for frying.

How to cook with photos step by step

Grate the zucchini on a coarse grater. In principle, the size of the grater does not matter: no matter how small or large, it still turns out tasty and without problems.

Also grate three onions to make the dough tastier and juicier. Add chopped dill there.

Pour flour into the zucchini base and continue stirring with a spoon. At first the dough comes out thick, but we will correct this later. But by adding flour at this stage, we will avoid lumps in subsequent ones.

We also beat in chicken eggs so that the pasties keep the correct shape. Also add a little salt and pepper if desired.

Now pour in the milk, achieving the desired consistency.

As you can see, there are absolutely no lumps.

Salt and pepper the minced meat. We use any minced meat: chicken or pork and beef.

Pour one ladle of batter into a frying pan with heated oil, lightly level the cake so that it is as round as possible.

Immediately distribute the minced meat onto one half of the dough. Fry the cheburek on one side for now, on the bottom side.

Then, when the lower part is browned, put half of the cheburek on top, thereby covering the minced meat. So the cheburek turned out to be the correct shape, like a crescent. Fry the cheburek until done.

In this way, fry everything until the minced meat and dough are gone.

Serve hot zucchini pasties to the table. They look simply amazing.

Zucchini pasties with minced meat and cheese

These fake pasties are delicious warm or cold. They store well in the refrigerator, so they can be prepared in advance and served for breakfast. But fresh and crispy always taste better.

Ingredients:

  • zucchini - 500 gr
  • sour cream - 3 tbsp. l.
  • eggs - 2 pcs
  • flour - 100 gr
  • salt pepper
  • garlic - 2 cloves
  • minced meat - 250 gr
  • onion - 1 pc.
  • salt a pinch
  • ground black pepper
  • hard cheese - 100 gr

Prepare all the ingredients and the cooking process will become much easier. Grate the zucchini on a coarse grater.

If the zucchini is large, use only the pulp. The skin must be cleaned and large seeds removed. You can take small, young vegetables.

Grate on a large cloth. If you grind it with a blender into a homogeneous puree, you will have to add more flour to the dough.

We salt the zucchini and leave it, we need it to let out the juice. After 5-10 minutes, the zucchini will release juice. Wash your hands, take a small amount of grated zucchini into your hands and squeeze out the juice. Transfer the drained vegetables to another bowl. So squeeze out all the grated vegetables.

Beat in two eggs, add three tablespoons of sour cream (it doesn’t matter what kind of sour cream you take, store-bought or homemade).

For piquancy, I add two cloves of garlic to the zucchini mixture. I peel and chop the garlic through a press. Can be finely chopped with a sharp knife.

Add ground black pepper and add one hundred grams of sifted flour. Mix everything well until smooth. The dough is ready, you can fry it.

At the same time, during the cooking process, we prepare the filling for the zucchini pasties. For this we need minced meat. You can make it yourself at home using a meat grinder, or buy it ready-made in a store or supermarket.

Place a frying pan on the fire, pour in vegetable oil, and heat it up. Peel one onion and cut it into cubes. Fry over medium heat for 1-2 minutes, stirring. Add any minced meat and mix.

Cook over low heat until done, this is about 20-25, but it all depends on the choice of meat. The chicken cooks faster.

At the end of cooking, salt the minced meat to taste and add ground black pepper. You can also add finely chopped herbs (dill, cilantro, parsley). Any dry herbs and spices, if you like (basil, suneli hops, coriander).

Pour a small amount of vegetable oil into a frying pan and heat it up. Reduce heat, add 2-3 tablespoons of zucchini mass and give it a round shape, fry on one side over low heat, turn over and fry on the other side.

Then, put 1-2 tablespoons of minced meat on one part of the zucchini pancake and spread grated hard cheese.

We put minced meat and cheese on one part, and cover with the second part on top. Using several forks, cover the cheburek. There is no need to do this with your hands as the dough is very hot.

Press down with forks to prevent the baked goods from unfolding. Then the cheese will melt, and one part will stick to the second, nothing will unfold.

Cover with a lid and cook over low heat for one minute, then turn over to the other side and cook for another 1 minute. Don't worry, all products are already ready to eat. Therefore, it is important for us that everything warms up well and the hard cheese melts.

The result is a delicious cheburek, very juicy and tender, the dough is simply super, unusual, but amazingly tasty.

You can serve it hot or cold, but I assure you that they don’t have time to cool down and are eaten immediately.

Chebureks from zucchini with minced chicken

Zucchini season is coming, we love them very much and often cook them, but zucchini pasties have become a favorite lately. They are prepared without oil, in a dry non-stick frying pan.

It turns out to be a very tasty and satisfying dish. The dough recipe is a little unusual. So try it, cook it, because the season of young zucchini is in full swing.

Ingredients:

  • 500 grams of zucchini
  • 2 eggs
  • 1.5-2 glasses of milk
  • dill greens 1-2 tbsp. l.
  • any vegetable oil
  • 1.5-2 cups flour
  • 1 tsp. baking powder (optional)

Filling:

  • 500-600 grams of chicken meat
  • 1 onion
  • salt pepper

First, let's prepare the filling. Grind the meat through a meat grinder. You can take fillet or thigh. If you take a leg or thigh, remove the bone and skin, cut the meat into pieces and grind into a meat grinder.

Peel the onion and pass it along with the meat. Add salt and pepper. Pour a little water, if you take fillet, the minced meat turns out a little dry, and to make it juicier, I pour in water.

If you do not add water, the minced meat will be crumbly and dry. Fry the meat in a frying pan lightly greased with vegetable oil. If you don't want to fry, boil the chicken and put it through a meat grinder.

Fry for about 5-10 minutes, turn off the heat, add everything, and cool. Meanwhile, while the meat was frying, prepare the zucchini dough.

Wash the vegetable, cut into cubes, add 2 eggs, salt, and grind with an immersion blender.

Add flour, milk, mix everything well with a whisk. And at the end we add greens.

The batter should be a little thicker than for regular pancakes, and spread well over the pan. Add finely chopped dill and mix everything well.

We put a frying pan on the fire, I have a non-stick coating. For the first pancake, I grease it with vegetable oil, but this is only for the first.

I take half a ladle of dough and spread it over the surface of the pan. Fry over low heat on one side.

After half a minute, place the meat on one side of the pancake and cover with the other half.

Cover with a lid and fry for half a minute on each side. Be sure to fry over low heat and cover. Make sure nothing burns; we don’t want to burn it, but fry it evenly.

Place the finished products on a plate and serve. Meanwhile, fry all the remaining chebureks.

From the given quantity of products that are indicated, 6-8 chebureks are obtained. There may not be enough minced meat for everything, but you can make pancakes.

Serve with sour cream. It turns out so delicious that it is impossible to tear yourself away. Plus, the baked goods themselves turn out to be low-fat, and even with chicken.
