Delicious and unusual dish for dinner - thighs stewed in nut sauce. You will be pleasantly surprised by the delicate, original taste of meat, and thick sauce from walnuts Also great as a side dish. By the way, the sauce can be made heterogeneous, with pieces of nuts, or you can “punch” it with a blender until you obtain a silky, creamy consistency.

Ingredients

  • 4-5 chicken thighs
  • 5 cm leek stem
  • 2 handfuls of walnut kernels
  • 1.5 tsp. salt
  • 2 tbsp. l. vegetable oil for frying
  • 1/5 tsp. ground paprika
  • 2-3 pinches of ground black pepper
  • 2-3 pinches of dried basil
  • 150 ml water
  • greens before serving

Preparation

1. First you need to marinate chicken thighs. You can remove the skin or leave it on if you wish. Wash the chicken and dry with napkins, then spread with salt, spices and dried basil. Leave in a cool place for 30-40 minutes.

2. Wash the leek and chop finely. Of course, if there is no leek, then a regular onion will do.

3. Chop walnuts and take out the kernels. It is not necessary to chop them, the main thing is that they do not contain pieces of shells and membranes.

4. Heat in a frying pan vegetable oil and fry the chicken on both sides over high heat until golden brown crust(5 minutes each). Then add nuts and chopped leeks.

5. Add water, mix everything. Simmer under the lid closed for about 30 minutes, checking periodically to see if it is burning?

To that simple recipe It took me a long time to select the chicken, every time there was something missing, more often it was walnuts, which somehow don’t last long in our house. But then the child was strictly ordered not to touch the nuts, and - hurray-hurray!!! - I was finally able to cook this miracle.

At its core, chicken in garlic-nut sauce is nothing more than satsivi, but my recipe is a quick and maximally simplified version of it, amazingly suitable for the summer menu.

From the products you need to take only a few simple products:

Chicken, or any of its meat parts - legs, thighs - what to eat;

About 10 walnuts;

Garlic clove;

Mayonnaise, salt and parsley.

I bought two chicken legs and thighs for two servings, cleaned them and cut them into pieces.

I peeled the nuts, garlic, and washed the herbs.

Place the chicken in salted water and cook for about 20-25 minutes until fully cooked.

Chop the greens and chop the walnuts very finely.

For satsivi sauce, in addition to nuts and herbs, you need garlic - we will press it with a garlic press - mayonnaise and strained chicken broth. You need to beat it with a mixer or blender, so I immediately put everything in a deep bowl.

Crush the garlic.

Add about 4 tablespoons of mayonnaise and half a cup of chicken broth.

Beat everything with a mixer, adjusting the thickness of the sauce until it reaches the consistency liquid sour cream. The fact that the satsivi seems a little watery is not scary - the excess liquid will then be absorbed into the chicken and the sauce will thicken.

Place the cooked chicken on a plate and let it cool slightly (so as not to burn your fingers).

We separate the meat from the bones; pieces of any size, both large and small, will be good. I liked the small and medium ones even better - they were more saturated with sauce.

Pour the walnut-garlic sauce over the chicken, cover with a lid and place in a cool place for at least a couple of hours.

Serve the finished satsivi with plenty of white bread- baguette or ciabatta. We eat with pleasure, in the family circle you can simply soak the sauce with bread.

Pour in the cream, salt and pepper the sauce to taste, add a pinch nutmeg and bring to a boil. If the peanut sauce seems too thick, add more cream.

Place fried chicken thighs in nut sauce.

Stir until the meat is coated with the sauce. Simmer the chicken in nut sauce, covered, over low heat for about 30 minutes until the meat is completely cooked.
