  1. Place the cottage cheese on a plate, sprinkle it with salt to taste and mash the cottage cheese with a fork.

  3. In a separate bowl, mix kefir with soda and salt, add flour into this mixture in parts and knead the dough, one should turn out soft, pliable and elastic. Sprinkle the table with flour and roll out the dough on it into a thin layer, cut out circles from the dough. We put our cottage cheese filling on each circle.
  4. Now we seal the edges of the dough tightly, place the dumplings on a floured cutting board and put the dumplings in the freezer for half an hour.

How to prepare kefir dough for dumplings with cottage cheese

First, prepare dough for dumplings using kefir for dumplings with cottage cheese. Break the egg into a deep bowl, add salt and sugar.


Whisk the egg with salt and sugar.


Pour in kefir. Mine is not oily, but you can take any.


Gradually add flour in small portions until it becomes thick enough.


Then transfer the dough to a table sprinkled with flour. Well with your hands, you need to knead it so that it becomes elastic and soft. But at the same time, quite cool and homogeneous. The main thing is that it does not stick to your hands. When everything is ready, you need to give the dough a rest, after wrapping it in cling film for 15 minutes.

While the dough is resting, prepare the cottage cheese filling. Place cottage cheese, which can be of any fat content, in a bowl. I have 5% cottage cheese. Add sugar to taste. Three tablespoons was enough for me.

Start making dumplings. Roll out part of the dough into a layer 2-3 mm thick. Cut out circles using any notch and fill them with cottage cheese. You can do things differently. Roll a piece of dough into a sausage, which is cut into pieces 2 cm wide. Then roll each sausage into a circle with a rolling pin. Place a portion of cottage cheese in each circle.


Form dumplings and place them on a plate or cutting board sprinkled with flour.


If you are not going to eat dumplings right away, send them to freezer poste restante. If you want to cook right away, then pour water into the pan, add a little salt, and bring to a boil. Pour sugar, a little salt into the cottage cheese and grind well. Beat in the egg and add kefir (if the cottage cheese is low-fat and liquid, then you don’t need to add kefir), stir everything well.

Into a homogeneous curd mass add melted liquid without lumps butter and gradually pour in flour, which it is advisable to sift beforehand. Knead the dough first with a spoon, and then with your hands, doing this on a board or on a table sprinkled with flour. The dough should not stick too much to your hands. If necessary, add more flour.

Now you can pour water into the pan (it is advisable to fill a little more than half the pan with water), add a little salt and put it on the fire.

It's time to start making the lazy dumplings themselves. For this curd dough you have to cut it in half. From each part, roll a sausage with a diameter of about 2-3 cm and cut it crosswise into pieces of equal size (about 1 cm thick). They can be placed on a plate or on a board sprinkled with flour.

When the water boils, carefully lower some of the dumplings into it. It’s better not to add a lot at once, because during the cooking process they will increase in size. How long to cook lazy dumplings with cottage cheese? Usually, after the dumplings float, they are cooked for about two more minutes. But it all depends on the size of the workpieces: if your dumplings turn out to be plump, then you need to cook them a little longer, about 3-4 minutes.

Remove the dumplings from the pan with a slotted spoon and pour over the butter.

When serving, dumplings can be sprinkled with sugar and sour cream. Lazy dumplings can be eaten in this form, but you can make them much tastier and more appetizing if you also fry the cooked dumplings in butter in a frying pan. To do this, place them in a well-heated frying pan with oil and fry over medium heat until golden brown on each side. This will take about three minutes on each side. Dumplings with kefir are a dish from my Ukrainian childhood. In Ukraine, we always prepare the dough for dumplings only with kefir, and the filling can be completely different: cottage cheese, berries, potatoes, even poppy seeds. It is believed that dumplings should be fluffy. This dough is very suitable for dumplings with berries; it hardly shines through at all. Gradually add flour. It may take approximately 2.5 or 3 cups, depending on the variety and gluten. I always add flour not all at once, but gradually and knead the dough well until it completely lags behind my hands. It is also useful to throw the dough several times (50!) on the table; this method softens the gluten very well.

Cover the dough and let it rest for about 15 minutes.

While the dough is resting, prepare the filling. Rub the cottage cheese through a sieve to remove grains. Add the yolk, sugar and a pinch of salt. Stir until smooth.

For ease of use, divide the dough into several parts. Take one, leave the rest under the towel. Make a sausage out of the dough and cut it into pieces. Flatten each piece and roll out slightly. I like this method, it’s faster and without any scraps than rolling everything out at once and cutting it out with a glass.
