Introducing complementary foods to a baby is an important stage in his life. This moment of acquaintance with “adult” food should leave pleasant new sensations and be to the taste of any child.

The introduction of liver into the diet takes a separate place. This healthy product, which is an excellent source of iron, can be introduced once a week from 7 months. A one-year-old child can already diversify the menu with all kinds of liver dishes.

Benefits of the liver

Many people consider liver to be a dangerous and difficult product for a child. This is a misconception, because it contains many useful and nutritious substances. Its use is recommended for children for health and medicinal purposes. Correct use of this product in the diet of a child aged 1 year will not bring any negative effects.

The most useful is fish (cod) liver, which contains iodine, zinc, calcium and a huge amount of vitamin D, which is an excellent means of preventing rickets. It is highly recommended for children with disorders of the nervous system, and is also useful for problems with the cardiovascular system.

Tender chicken liver, thanks to folic acid, supports the baby's blood and immune system. It also helps greatly with fatigue, lung diseases and poor eyesight.

Beef liver, but better than veal liver, thanks to the large amount of vitamins A and B, maintains hemoglobin at normal levels, accelerates the process of tissue repair in many organs, and improves immunity.

Pork liver, due to its high content of proteins, fats, minerals, vitamins, amino acids and enzymes, is also very useful for children. But due to the high fat content, such liver should be included in a child’s diet, even if the child is already one year old, with extreme caution.

A large selection of ready-made baby food allows mothers to significantly save time. But it is much healthier if you prepare the dish yourself from fresh liver, which will be seasoned with mother’s care and love. It will be tasty, nutritious, healthy and interesting.

How to prepare liver for a child?

To prepare any dish, it is necessary that the liver is always fresh, cleaned of film, and that the pieces used do not contain streaks.

PATE

The best way to cook liver is pate. Soft and gentle, any baby will definitely like it. Moreover, there are a lot of recipes for pate, and the child will always find something to suit his taste. By adding certain ingredients, the pate can be made drier or softer and more tender, more meaty or more vegetable. The main thing is to watch the baby, he himself will tell you his taste preferences.

PATE WITH MEAT

A rich liver-meat pate is made from boiled liver, boiled chicken fillet and boiled carrots. Beat the prepared ingredients with a blender until smooth. Add salt to taste. Add butter or broth to a thick and dry pate.

PATE WITH EGG

Boil the liver and eggs. Beat them until smooth with a blender, adding butter. Salt to taste. The ingredients are added at your own discretion, but you can focus on the following proportions: liver - 300 g, eggs - 2-3 pcs., butter - 150 g.

PATE WITH VEGETABLES

Carrot and onion pate is the most classic dish. Boil the liver, carrots and onions. Beat the finished products in a blender, adding butter. To make the pate more liquid, you can increase the amount of oil, but it is better to dilute it with liver or vegetable broth.

PUDDING

A close dish to pate is pudding. Its delicate composition will please any fussy person.
Soak dry bread or roll (15 g) in milk. Pass the prepared bread and liver (50 g) through a meat grinder 2 times. Lightly salt and, if necessary, dilute with milk to form a porridge. Add ½ yolk and ½ white to the liver mince, previously whipped into a stiff foam. Mix everything thoroughly and carefully. Prepare a baking dish by greasing it with butter and sprinkling with breadcrumbs. Carefully pour the pudding into the pan. Boil water in a wide saucepan. Lower the mold there so that the water reaches half of the mold. Cook for 45 minutes with the lid closed. The finished pudding goes perfectly with mashed potatoes.

GRAVY

If your child doesn't like liver, liver gravy is a great compromise. Multicooker gravy with a rich taste, delicate texture and wonderful aroma can be poured over any porridge.

Cut ½ onion into half rings and fry in the “baking” mode for 15 minutes. Cut 350 grams of washed, peeled liver into pieces and add to the onion. Continue cooking covered for another 10 minutes. At this time, dilute 1 tbsp in a glass of boiled water. spoon of flour and 1 tbsp. spoon of sour cream. Pour the finished mixture into the liver. Mix everything and add salt to taste. If desired, you can add bay leaf and cook everything for another 10 minutes in the “stew” mode. The gravy is ready. Even if your baby refuses liver, he will certainly like the gravy.

PANCAKES

A one-year-old child can already be offered lightly fried liver in the form of pancakes. An adult baby will be able to eat such solid food in pieces. Grind the liver with a small amount of onion in a meat grinder or beat in a blender. Add salt and thicken with a spoonful of flour. Fry thin pancakes in a heated frying pan.

SOUP - PUREE

This soup is very similar to liver pudding, but is prepared not in a water bath, but over a fire. Chicken liver is best for soup.

Soak 100 grams of bread in ½ glass of milk and mix with the yolk. Grind 100 grams of liver and add to the bread. Grind everything through a sieve and pour in 1 cup of broth or water and cook for 10 minutes. Add salt to taste and season with 2 teaspoons of butter.

To make the soup less meaty, you can add a little potatoes and carrots at your discretion. You can dilute the soup to the desired consistency with broth.

CASSEROLE

A complete ready-made dish for a child is a casserole. Cook crumbly porridge from ½ cup of rice in milk and water (½ cup each). Grind 400 grams of liver and 1 small onion through a meat grinder and mix with boiled rice. Beat in 2 eggs, add salt. You can season with marjoram and ginger or other spices. Grease a baking dish with 3 tbsp. spoons of butter. Bake the dish for 1 hour at 175°.

SOUFFLE

You can make a soufflé for your baby from fish liver. It will not only be tasty, but also very healthy.

Boil 200 grams of potatoes. Beat the cooled potatoes with 50 ml of milk. You can also add a piece of butter. Mash cod liver (½ jar). Separately beat 1 egg white. Combine potatoes, liver and protein and beat again. Season with salt to taste. You can add lemon juice (½ piece) and dried mint (1 teaspoon). Place the prepared mixture into a baking dish greased and sprinkled with breadcrumbs. Cook for 20 minutes in the oven at 200°. The slightly cooled soufflé is ready to eat.

RULES FOR THE USE OF LIVER

Despite the fact that liver is a very healthy and nutritious product, we must not forget that it can also cause harm to the body. And excessive pressure on a child can turn him away from this product for a long time. To make food a joy, you need to remember a few rules.

  1. If the child is not ready to accept liver into his diet, postpone the introduction of this product for another couple of weeks. It's okay if your child tries liver for the first time in a year.
  2. Allow your child to decide when lunch ends. Don't force him to eat every last crumb.
  3. It is best to prepare it in the form of a puree for the first acquaintance with liver.
  4. If after taking liver the child shows signs of an allergy, you should immediately stop feeding this product.

Liver puree

The first and main way to prepare liver for children is puree. It can be given as early as eight to nine months.

Making puree is the simplest.

  • Wash a small slice (80 - 100 g) of beef liver, remove films and place in a small saucepan.
  • Add a little water (1/3 cup) and simmer over low heat until soft. You can use a double boiler or slow cooker.
  • Grind the finished liver in a blender and, if the baby still has very few teeth and the consistency is not uniform enough, rub it through a sieve.
  • We also strain the remaining broth and add it to the puree.

One serving of this simple dish for children contains the daily requirement of vitamins A, D, E and, most importantly, all essential amino acids.

When the baby gets a little older and gets used to the new taste, he can already make liver pudding or, as it is also called, soufflé.

Ingredients

  • Raw liver (chicken or beef) – 100 g
  • Slice of white bread without crust – 2 pcs.
  • Milk – ½ tbsp.
  • Chicken egg – 1 pc.

Preparation

  1. Grind the bread soaked in milk along with the liver in a blender, add the yolk and beat again. The white can be beaten separately with the addition of salt, and then gently mixed into the liver mass - this will make the soufflé more tender.
  2. If we are preparing a soufflé in a water bath, then put the mixture in a metal or porcelain mug, greased with oil, and place it in a saucepan with water so that there is water in it up to half the mug. Cover with oiled paper. Cover the pan with a lid and cook over low heat for 40 - 45 minutes.

If we cook in a slow cooker or double boiler, then take silicone muffin molds and cook at the desired setting for 30 - 35 minutes.

You can offer this yummy dish to your baby on its own or with a side dish of vegetable puree. If the dish is made from beef liver, then it will be most useful for children with low hemoglobin. It is also suitable for adults who prefer a fitness diet, because per 100 g there are almost 23 g of easily digestible protein.

If you want to enhance the taste a little, add a quarter of a small onion to the minced meat - it will turn out even juicier.

Don't forget about chicken liver. It is no less, and in some respects even more useful, than beef. It is chicken that contains a record amount of folic acid, an essential element for improving hematopoietic function and maintaining the immune system.

  1. Boil the washed liver in a small amount of salted water for about 10 – 15 minutes. And then we let it drain, leaving it in a colander.

  3. Cut the cooled liver into pieces and add to the vegetables. Stir, add salt. Add spices, if provided, and cover everything with a lid. Simmer for 10 to 25 minutes, depending on what consistency of vegetables is needed. If you need them softer, it’s better to add time.
  4. At the end, you can add cream and hold for another 3 minutes.

The finished dish can be sprinkled with herbs - a wonderful light dinner is ready! Bon appetit!

If you want to make the dish more filling, you can combine liver with cereals. For example, liver with rice or buckwheat would be an excellent option.
