A bread maker has made the life of many housewives significantly easier, caring primarily about the health of their family. Homemade bread will never compare to store-bought bread. It will always be tastier, fluffier, more aromatic and most importantly, healthier!

But why does homemade bread still taste better? Yes, because it is prepared with your own hands and with love. This is the main secret of homemade bread!

Today there are many bread machines from a variety of manufacturers. For the health of your family, I recommend, based on my experience, purchasing a bread maker for your home. It won’t take up much space, but it will be of many benefits. I will not review bread machines in this article, because... I have one Weissgauff BM-1400 bread machine and haven’t used any others. The flour must be sifted, saturating it with oxygen. This way the bread will be more fluffy and airy.

Strictly follow the recipe for putting food into the bread machine. The liquid should be poured into the baking bowl first. My disastrous experience was like this once - first I put bulk products in the bowl, then poured water. While stirring the ingredients in the bowl, the entire bread maker got dirty! Don't repeat my bitter experience.

Follow the product recipes strictly. There is no need to put, for example, 2 tablespoons of salt, and not one, as indicated in the recipe. The abundance of salt detracts from the work of the yeast; they do not raise the dough well. Flour must be poured in the amount indicated in the recipe. If you add flour, the bread will turn out sticky. And if there is not enough flour, the top of the bread may fall off irreparably during baking.

It is better not to remove baked bread from the bowl immediately. Firstly, you can get burned; secondly, the spatula gets stuck tightly in the hot bread; thirdly, eating hot bread is harmful to the stomach. The finished bread should be cooled and then removed from the bowl.

Well, the last piece of advice is to carefully read the instructions for your bread machine. Each bread machine is individual, as are its settings. Therefore, the first step is to study its functioning, as indicated in the instructions.

Ingredients:

  • Vegetable oil - 1.5 tsp;
  • Sugar - 1.5 tbsp. l.;
  • Salt - 1.5 tsp;

The benefits of whole grain flour and bread made from it are extremely enormous compared to premium flour. This flour is produced by grinding the grains along with the shell, which allows you to preserve all the vitamins, minerals, macro- and microelements so necessary for the body. Because Since this is coarse flour, the bread obtained from it is not particularly fluffy and airy, even thanks to the yeast. But still the bread turns out extremely tasty. Since in all recipes flour and some other products are measured in cups that come with bread machines, it is recommended to take dishes with a scale in ml. It is more convenient to measure flour in a container with a 230 ml mark. The conversion to grams next to the “cups” in the tables is approximate.

This is my favorite and most delicious bread in the bread machine. It fits perfectly with everyone. The recipe does not indicate vegetable oil, but I always add a tablespoon, then the crust turns out fried and crispy. The cooking process is very simple - put all the ingredients in a mold and select the “French” program (4 hours). In fact, this program bakes bread for 3 hours 40 minutes, and 20 minutes is heating, but it is better not to use it, but to turn it off immediately. Otherwise, the crust of the bread will not be crispy.

Rye bread in a bread machine

This is an old Russian recipe that requires pre-preparing the starter. This starter can subsequently be used to bake another 10-15 loaves. The cooking time for our starter will be 18 hours.

Sourdough recipe:

In a small, non-metallic wide bowl, mix all ingredients until smooth, then place the mixture in a warm place. After 3 hours, stir the starter, and after 18 hours, put it in the refrigerator.

Rye bread recipe:

Pour all ingredients into a baking dish in the order shown above. Please note that the tea leaves must be strong (4 tea bags per 60 ml of hot water, steep for 5 minutes). For baking, select the “Russian Chef” program. The color of the bread crust for the first time is medium.

2. Wheat-rye bread

This bread is suitable for beginner bakers. Although rye flour is capricious, we use it less than wheat flour, so you will definitely get some bread.

  • 1 tsp salt

  • 1 tbsp. vegetable oil
  • 250 gr. wheat flour
  • 150 gr. rye flour
  • 1 tsp dry instant yeast

You need to be very careful with the amount of rye flour, because it is quite capricious and can affect the final result. That's why we mix it with wheat.

The finished bread turns out gray and is perfect for breakfast with fresh butter and cheese, as well as for lunch.

3. Rye bread

This, so to speak, is an attempt to bake Borodino bread without malt. I haven’t seen malt in our stores, but I really like Borodino malt, so I tried this recipe. The taste is very similar, especially with spices. And the set of products is quite simple. By the way, instead of sugar, you can add honey, then the taste will be even closer to Borodino’s

Ingredients:

  • 150 ml warm water
  • 1.5 tsp. salt
  • 1 tbsp. Sahara
  • 2 tbsp. vegetable oil
  • 200 ml yogurt (it should be thick) or kefir or matsoni
  • 250 gr. wheat flour
  • 250 gr. rye flour
  • 1.5 tsp. dry instant yeast
  • 1 tsp cumin seeds - optional
  • 1 tsp coriander seeds - optional

Baking program: French bread/main/standard/3h. 40min.
Weight of finished bread: 750gr.
