  • a bucket from a bread machine (hereinafter referred to as HP) and a stirrer;
  • beaker;
  • measuring spoon (tea and tablespoon);
  • flour sieve (regular or in the form of a mechanical glass, like mine);
  • electronic kitchen scales (this is more accurate to measure than with a glass).

Step 2. Pour into the bottom of the bucket vegetable oil. We try to get on the mixer itself so that it is easier for it to knead the dough.Step 3. Measure out the required amount of salt with a special spoon for a bread machine and add it to the bucket.Step 4. Using the back of a HP measuring spoon (tablespoon), measure out the sugar and add it to the baking container.Step 5. Take a measuring cup, pour water according to the recipe and heat it a little in microwave oven. I usually heat for 30 seconds at 600 watts. For convenience, heat all the required amount of liquid in a larger container, for example, in a large cup. Thanks to the heat, our bread will rise better and the yeast will react faster.Step 6. Add warm water (or milk) to the baking container with salt and sugar. If you don’t have any strainer in the house, use a tea strainer with a handle. At first I used it until I purchased a mechanical sieve.Step 9. Carefully pour the sifted flour into the bread machine bucket on top of the added liquid (water or milk).Step 10. Make a small well in the flour for the yeast. The water from the bottom of the bucket should not mix with the flour.Step 11. Measure out the required amount of yeast with a special bread maker spoon.Step 12. Step 17. In my case, the flour is wet, I add 1 tsp. flour in the place where the dough sticks to the bucket.Step 18. The dough ball should be perfectly kneaded. This is evidenced by the absence of excess flour at the bottom of the bucket and the pleasant sound of the stirrer during kneading.

Step 19. After we have controlled the perfect kneading of the dough for 10 minutes, close the lid of the bread machine and do not touch the device until the end of baking.

How to remove a stirrer from bread

Step 20. Use oven mitts to remove the bucket from the bread maker and place it on a wooden surface to cool slightly (2-5 minutes).Step 21. Shake the bread onto a board or any convenient surface. Let's see if the stirrer remains in the bread - use the special hook that came with the bread machine and carefully pull it out. Step 22. Leave the bread alone for a while to cool completely. Today there are many bread machines from the most different manufacturers. For the health of your family, I recommend, based on my experience, purchasing a bread maker for your home. It won’t take up much space, but it will be of many benefits. I will not review bread machines in this article, because... I have one Weissgauff BM-1400 bread machine and have not used any others. To bake bread, use warm liquid (water or milk, kefir). In warm water, yeast rises the dough better. The optimal temperature is from 30 to 40 degrees Celsius. Hotter water can kill the yeast, but in cold water it will never start working.

The flour must be sifted, saturating it with oxygen. This way the bread will be more fluffy and airy.

Strictly follow the recipe for putting food into the bread machine. The liquid should be poured into the baking bowl first. My deplorable experience was like this once - first I put bulk products in the bowl, then poured water. While stirring the ingredients in the bowl, the entire bread maker got dirty! Don't repeat my bitter experience.

Follow the product recipes strictly. There is no need to put, for example, 2 tablespoons of salt, and not one, as indicated in the recipe. The abundance of salt detracts from the work of the yeast; they do not raise the dough well. Flour must be poured in the amount specified in the recipe. If you add flour, the bread will turn out sticky. And if you don’t get enough flour, the top of the bread may fall off irreparably during baking.

It is better not to remove baked bread from the bowl immediately. Firstly, you can get burned; secondly, the spatula gets stuck tightly in the hot bread; thirdly, eating hot bread is harmful to the stomach. The finished bread should be cooled and then removed from the bowl.

  • Poppy seed - 2 tbsp. l.

The bread is baked using the French program in 3.5 hours. The poppy seed is added after the bread machine beeps. The bread turns out airy, aromatic and crispy.

Yeast-free corn bread

Ingredients:

  • Warm milk - 300 ml;
  • Chicken egg - 1 pc.;

  • Rye flour - 350 gr.;
  • Wheat flour - 150 gr.;
  • Honey - 1.5 tbsp. l.;
  • Salt - 1 tsp;
  • Dry malt - 2.5 tbsp. l.;
  • Ground coriander - 1 tbsp. l.;
  • Warm water - 300 ml.

There is a special program for this bread - “Borodinsky”. Baking time - 4.5 hours. Malt needs to be scalded in 100 ml. boiling water, stir well and cool, then add according to the recipe. An hour before the bread is ready, you can sprinkle the top of the dough whole grains coriander

Yeast corn bread

Ingredients:

  • Warm milk - 300 ml;
  • Chicken egg - 2 pcs.;

Ingredients:

  • Sugar - 2.5 tbsp. l.;
  • Salt - 1 tsp;
  • Whole grain wheat flour - 500 gr.;
  • Dry yeast - 1.5 tsp;

Bread baking program - “Basic”. I must say that I bake this bread more often than all the others, because... I try to stick to healthy eating. The benefits of whole grain flour and bread made from it are extremely enormous compared to premium flour. 2. Wheat-rye bread

This bread is suitable for beginner bakers. Although rye flour is capricious, we use it less than wheat flour, so you will definitely get some bread.

  • 250 ml warm water
  • 1 tsp salt
  • 1 tbsp. Sahara
  • 1 tbsp. vegetable oil
  • 250 gr. wheat flour
  • 150 gr. rye flour
  • 1 tsp dry instant yeast

Baking program: French bread/main/standard/3h. 40min.
Weight of finished bread: 750gr.

By the way, if you don’t have a kitchen scale, you can measure the flour with the same measuring cup. 240-250 ml is approximately 150 g. wheat flour or 130 gr. rye.

You need to be very careful with the amount of rye flour, because it is quite capricious and can affect the final result. That's why we mix it with wheat.

The finished bread turns out gray and is perfect for breakfast with fresh butter and cheese, as well as for lunch.

3. Rye bread

This, so to speak, is an attempt to bake Borodino bread without malt. I haven’t seen malt in our stores, but I really like Borodino malt, so I tried this recipe. The taste is very similar, especially with spices. And the set of products is quite simple. By the way, instead of sugar you can add honey, then the taste will be even closer to Borodino’s

Ingredients:

  • 150 ml warm water
  • 1.5 tsp. salt
  • 1 tbsp. Sahara
  • 2 tbsp. vegetable oil
  • 200 ml yogurt (it should be thick) or kefir or matsoni
  • 250 gr. wheat flour
  • 250 gr. rye flour
  • 1.5 tsp. dry instant yeast
  • 1 tsp cumin seeds - optional
  • 1 tsp coriander seeds - optional

Baking program: French bread/main/standard/3h. 40min.
Weight of finished bread: 750gr.
