Salted minced meat for cutlets. I pepper a little to give a light and pleasant aroma of spices to cutlets.

Slightly moistened, dipped in water, with my hands I form round cutlets and bread each in breadcrumbs. I have homemade crackers, but you can also use purchased ones.

Pour the oil for frying cutlets and warm over medium heat. I put the formed cutlets in the pan and start frying. I fry the cutlet by lowering the fire a little so that the cutlets are slowly fried inside. If the fire is strong, then the crust will quickly form, and even begin to burn, and inside the minced meat will remain raw and not fried. It is important that in the process of laying out they immediately begin to sizzle and fry. This means that the cutlets will immediately seal and remain juicy inside. If the oil is poorly heated, then the cutlets will absorb a lot of oil and will be too fatty, and this is not good.

You need to fry cutlets with the lid closed. When the bottom side of the cutlets is fried, browned, then turn over with forks, fry on the reverse side.

First, peel the potatoes, onions and garlic. Cut everything coarsely (arbitrary pieces) and put a knife into a blender bowl with a nozzle.

Grind with a blender for 1-2 minutes - as a result, you will get a homogeneous slurry of potatoes with onions and garlic.

Mix minced meat with onion-potato gruel, add salt and black pepper. If you cook minced meat yourself, then use pork and beef in equal proportions (if you take only one type of meat, then the cutlets can turn out to be too fatty or, conversely, dry).

Mix thoroughly with your hands. Then put it in a bag, tie it up and beat it against the table with force 15-20 times. Due to this procedure, the minced meat will become more plastic, it will not crumble, despite the fact that we did not add the egg.

Form meatballs into round or oblong cutlets. And bread in flour (this time I used whole wheat flour mixed with a little corn flour).

Fry the cutlets in a well-heated frying pan in oil on both sides until golden brown, about 5 minutes each. The fire should not be strong, then they will cook evenly.

At the very end, pour a little water into the pan and steam the cutlets under the lid for 10 minutes - the steam that forms will make the minced meat more lush and juicy, bring the meat and potatoes to full readiness. If you wish, you can stew cutlets not just with water, but in tomato sauce, then you get a delicious gravy.

Serve hot with your choice of side dish: mashed potatoes, porridge or salad. Enjoy your meal!

How to cook cutlets with potatoes in the oven

If you don't like fried meatballs, try baking them in the oven. Let the crust not turn out so fried, but you don’t have to stand at the stove, and there will be fewer calories.

In this case, it is still worth adding an egg to the minced meat (then the cutlets are guaranteed to keep their shape) - you will need 1 large chicken egg for every 500 g of minced meat. If you wish, you can add a little chopped greens to the list of ingredients, it will make the taste richer and more interesting. And for color it would be nice to add 0.5 tsp. ground sweet paprika. Breading of flour or breadcrumbs is not necessary.

From minced meat, form round cutlets with a thickness of about 1 cm. Line a baking sheet with parchment and grease with oil. Lay out the patties at some distance from each other. Grease the top with vegetable oil too - this will keep the moisture inside the cutlets, and a crust will form on the surface. Send the baking sheet to the oven, preheated to 210-230 degrees. Bake for 10 minutes. Then lower the temperature to 180 degrees and continue to cook the cutlets in the oven for another 20 minutes. By adding potatoes and a large amount of onions, cutlets will turn out to be very juicy and tasty.

Everything is very simple. Grind the meat. Then greens and finally onions. Since I put a lot of it, I then do not use bread so that all the minced meat comes out of the meat grinder. Onion replaces bread for me in this process. Add eggs, thyme, salt, pepper

Mix the mince well. You can even “beat” it a little to make it more uniform and denser.

Grate raw potatoes on a coarse grater. Squeeze it out lightly and add to the minced meat.

Mix well with potatoes. If you used pork, then take some minced meat and fry it in a pan to taste for salt. If you are using beef or lamb, you can try raw meat. Minced meat should be well (correctly) salted - otherwise the taste of ready cutlets will not appear. If necessary, add minced meat.

Shape into round cutlets about a centimeter thick. Place them on a greased baking sheet.

Brush cutlets with vegetable oil on top. This way you better retain moisture inside the cutlets. Place the baking sheet in a preheated oven at 210 degrees for 10 minutes. Then lower the temperature to 180 and cook for another 20 minutes. Cutlets will be ready.
