Sometimes you want to turn breakfast into a real holiday. What's the easiest way to do this? Prepare something unusual, not banal. Such a dish could be muffins with ham and cheese, which I suggest preparing. They turn out delicious, beautiful and will decorate any breakfast. Muffins prepared according to this recipe can also be an appetizer if you want to surprise your guests with something. Get to work, friends!

To make ham and cheese muffins, we will need:

  • Ham - 200 g
  • Cheese - 200 g
  • Milk - 1 glass (250 ml)
  • Egg - 2 pcs.
  • Butter - 100 g (softened at room temperature)
  • Flour - 2 cups
  • Baking powder for dough - 1.5 teaspoons
  • Fresh herbs - 1 bunch (I used green basil and dill, you can use thyme, rosemary, etc.)
  • Sugar, salt - 0.5 teaspoon
  • Ground pepper
  • Muffin tin (and paper cups)
  • Butter and semolina for greasing the pan (you can use vegetable oil)

How to make ham and cheese muffins

  1. Sift the flour with baking powder and salt into a cup, where we will make the dough and mix all the ingredients for the muffins. Add black ground pepper. Finely chop the fresh herbs, add to the flour and mix thoroughly.
  2. Cut the ham and cheese into cubes and add to the cup. Mix. Make a small depression in the center to add the egg-milk mixture.
  3. Separately, beat eggs with sugar in a cup, add milk and beat thoroughly into a homogeneous mass. Pour in a thin stream into a cup with dry ingredients, mix thoroughly with a spoon or wooden spatula so that there are no lumps.
  4. In a separate bowl, beat the butter with a fork until it becomes fluffy. Add butter to our muffin dough with ham and cheese, mix thoroughly, not for long, so that the dough is airy.
  5. Preheat the oven to 190C. Preparing the muffin pan. If you are using special paper muffin tins, you will need to grease the tin a little vegetable oil. I didn't have any molds, so I just greased the mold with butter and sprinkled it with semolina. Place the dough into the mold. Please note that the dough will rise, so do not pour too much dough. Each muffin can be topped with capers or half an olive. Now put the baking dish in the oven for 20-30 minutes.
  6. The readiness of ham and cheese muffins can be determined by their beautiful golden color and wonderful aroma, which will spread throughout the kitchen. Usually it is 25-30 minutes. Readiness can be checked in the classic way- using a toothpick to pierce the muffin. If there are no traces of dough on the toothpick, the muffins are ready and you can remove them from the oven.

The finished muffins must cool before you remove them from the pan and serve them. It is better to serve muffins with ham and cheese warm - this way their taste is revealed to the fullest. If they have cooled down, you can always reheat them in the microwave.

Have you ever wondered why some cheeses melt perfectly, while others give only a hint of melting? When the cheese ripens, it contains quite a lot of dicalcium paracasein - it holds back the other ingredients and prevents the cheese from melting. Over time and with the accumulation of lactic acid, dicalcium paracasein breaks down and gives way to monocalcium paracasein - but it is responsible for ensuring that when heated the cheese stretches and melts beautifully in strings.

Ingredients:

1/2 tsp. soda;

1/2 tsp. salt;

300 g flour;

50 g hard cheese;

150 g ham;

250 g sour cream;

60 g melted butter.


Measure out the required amount of flour. You can and should sift if you doubt the quality. If the flour is proven and good, there is no point in playing with the sieve. Add salt and soda there - this is the dry part of the muffins. If you want to add your favorite dry herbs or seasonings to the dough, you can do it now.

Mix flour, soda, salt - carefully and inspiredly: given that the muffin dough needs to be prepared quickly and effortlessly, you only have one chance to carefully distribute the salt and soda throughout the baked goods, and this chance is now.


Cut the ham into beautiful cubes.


Grind the cheese into the same pieces as the ham.


Add diced ham and diced cheese to flour mixture. Mix.


Take another saucepan and melt the butter.


Add sour cream (my homemade one is quite thick).


Beat in the egg. Mix.


Combine the liquid and dry parts and mix quickly with a fork.


Place the dough in the molds (fill 2/3 of the volume).


Bake at 200 degrees for about 20 minutes.


Delicious both warm and cold.

Good afternoon, friends! Today we will prepare cupcakes, but not the sweet ones that we are all used to, but snack ones with ham and cheese.

And to prepare the dough we will need: 200 grams of flour, 1.5 teaspoons of baking powder, 100 grams of butter, 120 ml of milk, 2 eggs (we take butter, milk and eggs at room temperature), 1 teaspoon of sugar, 1/3 part of a teaspoon tablespoons of salt, 1/3 of a teaspoon of freshly ground black pepper, you can also add any other spices to your taste, 50 grams of finely chopped or grated cheese and 100 grams of any other filler (this could be sausage, ham, smoked brisket, fried mushrooms, olives, sun-dried tomatoes).

And we will begin the preparation, as for classic cupcakes, by whipping soft butter. Add sugar, salt, spices to the butter and beat at high speed until light and fluffy. There is not very much oil, so it will scatter along the walls of the bowl; periodically remove it with a spatula and continue whisking.

When we have achieved a very fluffy, light state, add the eggs one at a time, beating each time for 1-2 minutes at high speed. The mass may separate a little, don’t let that scare you, it’s okay.

Next, we need to mix the flour with baking powder and sift about 1/3 of it into the beaten butter and eggs, mix at the minimum speed of the mixer until smooth. Next, pour in half the milk, mix again at low mixer speed, sift the flour, then pour in the milk again and sift the remaining 1/3 of the flour. Thus, alternating each other, we add dry and liquid products, each time mixing the mass until smooth. The result should be a very fluffy and airy dough.

For flavor, I decided to add a little dried garlic with dried herbs and now you can add the filler. Finely cut into cubes and mix the dough with a spatula. The cake batter is ready. You can bake them as in silicone molds, and in paper capsules for cupcakes. Large capsules yield 9 cupcakes; regular standard small capsules, 3.5 cm high, yield about 12 cupcakes.

Bake the cupcakes in an oven preheated to 180 degrees for about 25 minutes, top/bottom mode without convection. Be sure to check readiness with a toothpick inserted into the middle; it should come out dry and clean.

Transfer the cupcakes to a wire rack and let them cool. Cupcakes can be served either warm or cooled. You can remove the paper capsule first and serve it directly with it.

I propose to decorate the cupcakes as a snack for the holiday table - make a hat out of cream. For the cream, take 250 g of cream cheese, 80 g heavy cream fat content from 30%, 2-3 cloves of garlic, passed through a press and I will add a little finely chopped dill (you can use any greens). For the cream, we just need to combine all the products together; the cream and cheese must be very cold. I use salty cheese, so I don’t add additional salt. First, beat the whole mass at the minimum speed of the mixer until smooth, and then increase the speed to medium and beat the cream into a fluffy mass.

Next ready cream We put them into a pastry bag with a beautiful nozzle and place the caps on our cupcakes. This amount of cream is enough for 9 cupcakes, for hats that are not too large. And then we decorate our cupcakes and can serve such a beautiful and unusual snack that will certainly surprise your guests)

I offer you several very simple recipes, which you can use to make sausage and cheese muffins that work great as snack cupcakes.

Cheese muffins with ham

List of ingredients:

  1. First of all, preheat the oven to 190°.
  2. Pour milk or kefir into a bowl or other convenient container, break the egg and add salt.

  3. Take a whisk and mix, beating a little.

  4. We extinguish the soda over a bowl and sift the flour into it.
  5. Mix everything again.
  6. Rub a piece of cheese with the fine side of a grater and add it to the bowl.

  7. Cut the ham or sausage into small cubes and also add it to the rest of the products. You can add any seasonings

  8. Mix everything together.
  9. Grease the molds, no matter what kind you use, with oil. You can sprinkle a little semolina or flour.
  10. Fill each mold a third with our dough and place them on a baking sheet.

  11. Bake for approximately 25 minutes.
  12. Remove the cheese muffins from the oven and, after cooling slightly, serve.

  • sifted flour 12 tbsp;
  • ham 100 g;
  • slaked soda 1 tsp;
  • 1 bunch of fresh herbs;
  • kefir/milk 180 ml;
  • salt half tsp
  • Kitchen appliances and equipment: whisk, bowl, cutting board, sieve, grater, muffin tins.
  • Quantity: 14 pieces.

Cooking sequence:

  1. Turn on the oven at 190°.
  2. Grate a piece of cheese or cut it into very small cubes.

  3. We also chop the ham into small pieces.

  4. We chop the greens. I take dill, parsley and spinach, which can be replaced with sorrel, green onions or wild garlic.

  5. Place cheese, herbs and ham in one bowl and mix.
  6. Melt margarine or butter in a metal bowl.
  7. Beat the eggs and salt a little. I use a whisk for this, but you can use a blender or mixer.

  8. Pour the required amount of kefir or milk into another convenient container.
  9. Combine, stirring, kefir with beaten eggs and margarine.
  10. Using a sieve, sift the flour into the liquid mixture.
  11. We extinguish the soda.

For this I squeeze lemon juice, but you can use any vinegar.


Muffins with ham, cheese and vegetables

  • hard cheese 100 g;
  • carrots 1 pc.;
  • sifted flour 12 tbsp;
  • margarine/butter 50 g;
  • onion 1 pc.;
  • ham 100 g;
  • slaked soda 1 tsp;
  • sweet pepper 1 pc.;
  • kefir/milk 200 ml;
  • salt half tsp
  • Kitchen appliances and equipment: whisk, bowl, cutting board, sieve, grater, muffin tins.
  • Time spent: less than an hour.
  • Quantity: 14 pieces.

Cooking sequence:

  1. Boil the carrots until fully cooked. Cool, peel and cut into small cubes.

  2. Finely chop the onion. If desired, it can be fried.

  3. We clean out the middle of the pepper with the seeds and also chop it into small cubes.

  4. Rub a piece of hard cheese with the coarse side of a grater or chop it very finely.

Then add salt, sugar and ground black pepper to the softened butter.

Beat the butter and spices with a mixer for 3 minutes.

Add eggs to the resulting butter mixture one at a time, whisking constantly until smooth.

Then add approximately 100 grams of sifted flour and baking powder.

Mix at low speed of the mixer and pour in 60 ml of milk, mix again.

Then add the remaining flour and milk, mix well at low speed mixer until smooth. The dough will turn out very airy and tender.

Cut the cheese into small cubes.

Also cut the ham into small cubes.

Add cheese and ham to the dough, mix well with a spoon.

Divide the dough into the molds, filling them 2/3 full. I used paper inserts. I made 12 ham and cheese snack muffins.

Bake snack cakes in a preheated oven for about 30 minutes at 200 degrees. The cupcakes will rise while baking, but will fall a little when they cool. Warm muffins with cheese and ham can be served. I decided to decorate them with cottage cheese, sausage and vegetables.

I used cream cheese to decorate the cupcakes.

First remove the cheese from the refrigerator for about 1 hour, then transfer it to a pastry bag with a shaped nozzle.
